I know it is late in the season and the blooms are almost gone, but I was just barely able to get some blooms to make my lilac syrup canning recipe.

This recipe for simple syrup is very basic and you don’t even have to can it. To make homemade simple syrup, all you need is equal parts sugar and water, and whatever you are going to use to flavor it. So you can use as much or as little as you want. You can also use lavender, lemon, ginger and vanilla to flavour your syrup.

It is a good idea to can it if you are making a large batch at once. Especially when working with lilac flowers or rose petals as they don’t last very long. You also really need to use them the day you pick them. If you can the syrup you can make a bunch all in one day and then enjoy them all year round.
This is a basic recipe for simple syrup. The recipe will make about 6, 500ml jars. You can adjust the amounts of sugar and water, as long as you keep the 1:1 ratio. This recipe is safe for boiling water canning because the sugar has a high enough acidity to keep you from having to pressure can it.

Make sure that the lilac flowers that you are using have not been sprayed with any pesticides as they are not safe to ingest. The color of your lilac simple syrup will vary depending on the color of your lilacs. The syrup I made from my lilacs made an almost brown syrup as the flowers were getting close to dying.
